CHEESECAKE

Crust

- 220  grs    sweet butter cookies, crushed
-     2  Tbsp sugar
- 120  grs    melted butter

Mix all these ingredients in food processor until blent 
and cover a pan pressing firmly against the
bottom.

Filling

- 700 grs   Philadelphia cream cheese
-    ½ cup  sugar
-    3          separated eggs
-    1 Tbsp Maizena (cornstarch)
-    1 Tbsp grated lime rind
-    2 Tbsp lime juice
-   ⅔ cup  sour cream
-   ½ tsp   vanilla extract

Preheat oven at 150°. In a large bowl mix Philadelphia
and sugar with the electric mixer.
Add egg yolks, Maizena, lime juice and 

lime rind until smooth.
In another bowl beat 3 egg whites until 
stiff, fold them
into the cheese mixture and bake for 60
min.
Remove pan from oven and spread
mixture of sour
cream, 2 Tbsp sugar and vanilla over the
top and
return to oven for 15-20 min. more.
Let it cool and then decorate it with fruit,
jam, nuts,
chocolate, peanut butter, dulce de leche,
etc.
