CHICKEN AND CASHEWS

- 100 grs  (4 oz) cashews nuts
- 150 grs  (5 oz) mushrooms
-     3      chicken breasts, skinned, 
diced and seasoned with salt and pepper
-     2      onions, sliced
-     2      Tbsp soy sauce
-             a bunch of fresh coriander, chopped
-             a bunch of noodles

Boil the noodles until “al dente”.

Heat some oil in a wok and stir-fry the
chicken for about 5 min. 

Add the onion, mushrooms, cashews and
stir-fry for 5 more min.
Stir in coriander and soy sauce.

Serve with jasmine rice.
