ZUCCHINI CREAM

- 1 ltr       stock
- 600 grs zucchini, diced
- 1           onion, finely chopped
- Tbsp     olive oil
- 2           garlic cloves, crushed
-              cream by Tbsp until it thickens
-              parsley, a bit finely chopped

Stir and fry onion and garlic in a saucepan. Add zucchini allow it to blend with onion and garlic and pur in stock

Cover and cook until soft

Remove from heat and mix well in 
blender, pour this mixture back in

saucepan and fold in cream until it
thickens. Garnish with parsley
