CHICKEN AND POTATOES WITH MANGO SAUCE

- 6 chicken legs or thighs, skinned
- 4 garlic cloves
- 400ml or 4 dl water
- 1 Tbsp salt


Crush garlic cloves with water and salt. Use this mixture to marinate chicken two hours before cooking

-3 ripe mangoes, sliced(or)
-3 cans of mangoes
-1 Tbsp sugar

Crush mango with sugar and cook until it boils. Dry pieces of chicken on paper towels and organize them in a baking pan. Melt some butter and brush on chicken. Sieve water used to marinate and spread garlic on chicken.

     

Pre-heatoven to 250°C using the grilling mode. Roast chicken for 10 mins, then lower temp. At 200°C, leave chicken for 10 mins more, take it out and pour the mango mixture evenly.


Optional
You can organize pieces of peeled potatoes among the chicken. And continue in oven to 200°C for 20/30 mins more until tender. It is recommended to eat with white rice.
