- 1 cup
natural yoghurt
- ½ cup coconut
milk
- ¼ cup fresh
coriander, finely chopped
- 1 onion,
finely chopped
- 1
garlic clove, crushed
- 1 tsp
lime rind, grated
- 1 Tbsp lime juice
- 1 Tbsp curry powder, mild
- 1 Kilo chicken

Mix all ingredients and
pour this mixture over the pieces of
chicken placed in a ceramic container or
pyrex. Leave marinating
overnight and cover with foil paper.
Preheat oven to 180°C and bake for 45
min. without the mixture. Heat the mixture until it thickens adding if
necessary 1 Tbsp of flour mixed with a bit
milk.
Then pour on top of chicken,
spread some shredded parmesan cheese
and gratin it for 15 min.
