LIME PIE

- ¾    cup    sugar
-  6    Tbsp  flour
-  2    cups  whole milk, hot
-  2    egg yolks
-        juice  of 2 limes (or more to taste)
-  1    Tbsp  butter
-  ½   tsp salt

Press pastry in a round pie pan pricking the base with a fork, bake 
to 200° C for 10-15 min. and put aside.

Sift sugar, flour and salt in top of double boiler, add hot milk 
little by little stirring steadily until you get a thick and rich texture.

     


Remove double boiler from fire, stir in egg yolks mixing well, lime juice and butter. 

Spread mixture in pastry while warm, cover with whipped cream and 
place in oven to 180° C until golden brown.

Tip: You can use orange instead of lime juice or coconut milk 
instead of whole milk for different flavours.
