SALMON AND GUACAMOLE

Season the salmon with lemon juice, salt, thyme and rosemary.

Fry it in med-heat until golden brown on both sides. 

To make the guacamole, mash 2 ripe avocados altogether with a fork adding: 

-   1  Tbsp onion, grated
-   2  tomatoes, skinned and chopped
-   1  garlic clove, crushed

-   2  Tbsp olive oil
-  ½  tsp ground cumin
-   2  Tbsp fresh coriander, chopped
-       juice of a lime
-       salt, ground black and red pepper to taste.

Tip: Serve immediately as avocados go black when exposed to the air.
