SPANISH TORTILLA

- 1 Kilo      potatoes, shredded
- 1 large    onion, finely chopped
- 2 cups     oil
- 5            eggs
-               salt and ground black pepper


Mix potatoes and onion and when oil is hot enough, pour them into a frying pan and stir with 2 wooden utensils until potatoes are soft.

Drain the oil (you can keep it for another time).




Mix potatoes and eggs and return this mixture to pan, cook gently and when the eggs are set around the edges and slightly wobbly in the center, start moving pan in a circular movement until it´s ready to be turned over.

Cook some more time on the other side until golden brown.

►Tip:  The tortilla can be eaten cold or hot and you can add ham, sausage, red pepper, etc.
