Pieces of:

- skinless chicken (or an other meat)
- potatoes
- plantains, ripe and unpeeled
- yucca
- corn
- ½   cup    peas
- 1 handful  green beans
- 2             tomatoes, finely chopped

- salt and pepper to taste ( typical seasonings or saffron optional )
- 2 onions, finely chopped
- 1 bunch coriander, finely chopped
- 2 garlic cloves, crushed
- 2 cups chicken broth

Marinate chicken overnight.
Simmer onion, tomato and garlic in a covered saucepan until ingredients are
well blent. 

In a wide deep pan, place chicken, add a bit of broth and cook for 10 min.
Then add potatoes, ripe plantains, yucca, corn, the mixture of tomatoes and 
onions, more broth, cover it and cook until all ingredients are tender.

Toss in coriander 5 min. before serving.

► Tip:
    You can eat this with white rice.
