- 600 grs zucchini, diced
cream by Tbsp until
a bit finely chopped
Stir and fry onion and garlic in a
saucepan. Add zucchini. Allow it to blend with the onion and garlic and pour in stock.
Cover and cook until soft.
Remove from heat and mix well in blender. Pour this mixture back in
saucepan and fold in the cream until it thickens. Garnish with parsley.
