ORANGE AND CRUMB SALMON

-  85 grs    breadcrumbs, fresh
-  3   Tbsp olive oil, one for greasing
-              finely grated zest and juice of one orange
-  2   Tbsp fresh parsley, finely chopped
-  4          salmon fillets, skinless
-              ground pepper

Preheat oven to 180° C.
Mix breadcrumbs, oil, orange zest, half
parsley and season. Press orangecrumbs on Salmon fillets, put them on a baking sheet already greased andbake for 15-20 min. until cooked and golden brown.
